Instead, garlic contains Alliin, an odorless sulfur-containing chemical derived from the amino acid cysteine. When garlic is crushed, chewed, bruised or cut, alliin will be converted into allicin via the action of enzyme allinase. According to Commission E, 1 mg of alliin produces 0.458 mg of allicin. Allicin is the primary ingredient that gives garlic its pungent odor. Allicin is further broken down into other sulfir compounds, such as ajoene, vinyl dithiins and allyl sulphides, which also have medicinal properties.
